Garlic Parmesan Chicken Drumsticks
Easy, quick supper recipe for six garlic lovers.
You could even make this one ahead and freeze it for a really quick warm-up later.
Serve with rice or squash or any other favourite staple.
Large Saucepan or Dutch Oven
Large Frying Pan
Casserole dish or Baking Pan
Preheat oven to 400 F (200 C)
18 Chicken Drumsticks
Boil in 2 liters water for about 7-10 minutes
Take skin off drumsticks
Put aside for next steps
1 Cup Bread Crumbs
Substitute Gluten-free Bread crumbs or other product here if needed.
You could even use rice.
1 Cup Grated Parmesan Cheese
1/2 Cup melted butter
1 tablespoon garlic powder
500 grams Spinach
1 Cup butter
1 -2 tablespons minced garlic or 1-2 large cloves garlic, smashed.
While the chicken is boiling, start melting 1 cup butter in the saucepan, mix in smashed/minced garlic.
Lightly sautee the Spinach --only till the leaves are a bit limp-- in the garlic butter and place evenly in bottom of casserole dish.
Mix the bread crumbs and parmesan cheese together with the remaining garlic butter. Dredge the drumsticks in this mixture and line them up on top of the spinach. Cover with the rest of the mixture.
Put Casserole Dish in oven and bake till the parmesan/bread crumb mixture is toasty brown on top.
